Syllabus

This subject will cover the following topics: The science of winemaking;Fermentation and microorganisms;Control of microorganisms in winemaking and sanitation in the winery;Chemistry in winemaking;Winemaking control aspects;Winemaking calculations and units of measurement;Wine acids and acidity;The use of sulfur dioxide during wine production;Substances that complement the activity of sulfur dioxide;Phenolic compounds; andOxidation.

Learning outcomes

Upon successful completion of this subject, students should:
1.
describe and analyse the fundamentals of wine microbiology and winery sanitation;
2.
analyse winemaking problems and identify actions that will improve them;
3.
safely perform quality control analysis procedures, and interprete and report results; and
4.
explain the chemical and microbiological principles involved with winemaking.

Assumed knowledge

This subject requires an understanding of basic chemistry principles.

The subject is scheduled concurrently with CHM104, CHM115 or CHM108. Students need to complete WSC115 concurrently with (or after) the chemistry subject. Should students be prevented from successfully completing the chemistry subject, students will not be prevented from continuing WSC115, however, it is the responsibility of students to ensure they have an appropriate basic understanding of chemistry.
