Learning outcomes
Upon successful completion of this subject, students should:
1.
describe the structure and function of microorganisms, kinetics of microbial growth and how microorganisms can be cultivated and assayed;
2.
discuss the importance of microorganisms to human health, the environment and food systems;
3.
describe the microbial contamination of foods, food spoilage and food preservation and microbial borne diseases;
4.
apply the roles of microorganisms in food production and processing;
5.
explain the principles underlying the microbiological quality and safety of foods; and
6.
gain practical experience of common microbial detection techniques.
